two really tiny things with particles that might help with a more natural sound ^.^ First, instead of いっぱいのことが伝えたい, since こと is an object here, を would be better, and it might flow better to say ことをいっぱい伝えたい. Also, instead of 感謝する気持ち, since 感謝 can be used as a noun, 感謝の気持ち might be easier ^.^

If I could go back in time, I'd go back and meet myself from the past. (For gambling purposes) I'd give myself the most current sports almanac with up-to-date game results.
If I could return to the past, I would like to meet my uncle Bill again. Uncle Bill was my mother's favorite brother; he lived in San Francisco. Sadly, he died suddenly when I was only ten. My mother inherited all of his possessions, some of which she passed on to me. Since then, through the books and albums that Uncle Bill left me, I have come to discover my uncle's real self as well as my own aesthetic tastes. I have always wished that I could meet him as an adult and have a heart-to-heart conversation. I'd like to convey my thanks to him.
Out of anyone from history, I would love to meet William Shakespeare. I've been reading his plays and poems since I was a child, and I adore them (yes I've read the Complete Works ^.^;; ), so I would love to have a chance to speak to the person who came up with all those amazing works (plus it would solve the Authorship Question once and for all, but that's a story for another day ^.~) If it's someone from Japanese history, I'd like to meet Date Masamune, who was the Daimyo of Sendai (now called Miyagi), where I lived. Meeting the nationally famous "One-Eyed Dragon" would be an honor.
If I could relive the past*, the person I most want to meet again is my grandmother. She died a few years ago. She was a very kind and elegant woman. I want to speak to her again.
