just like making a negative into the past tense - just drop the い and add かった - so "I had to go" would be かなくてはいけなかった

So, using くちゃ instead of くては is more casual, right? Also, I am sorry, I know this is a terrible question, but the は is pronounced as it would be as a particle, correct? Wa, instead of Ha? Also, I have seen people write いけません as well as いけないです。Are both correct?

くちゃ is more casual than くては, and yes, the は is pronounced わ there because it *is* a particle - literally this pattern is a double negative (you can't not do such-and-such) so it might be easier to think of it as なくて は いけません. いけません and いけないです are both correct, but the former is slightly more formal.

Is くちゃ seen as more feminine? I seem to recall there's a version of this that is childish/girlish, perhaps くちゃう?

Does anybody have a better guess on how to translate this sentence? It currently doesn't have an entry in here.

essential sounds good to me! It does *kind of fit* if you think of it this way:

べなくてはならない = we cannot have the situation where there is no eating = we must eat
なくてはならない = we cannot have the situation where there isn't (ない) = we must have it
