I have seen japanese people use characters i know, and then pretty sophisticated characters that are probably kanji. I'm just curious, is this normal?
Yes, it's absolutely normal! That's the way japanese is
To add to what DeputySon said:
- Some particles and question words are written in hiragana e.g. が、は、いつ
- Foreign words and sound effects are written in katakana e.g. テレビ、ザー
To get an idea how common it is, here's a beginner level (JLPT N5) Japanese sentence for "I ate an apple" that contains hiragana, katakana, and kanji.
私はリンゴを食べました。
(kanji in blue) (katakana in red) (the rest is hiragana)
I would say most non-trivial sentences contain both hiragana and kanji. For katakana, it is common to find sentences both with and without it.
