It's not you tube, but https://www.nhk.or.jp/school/ has a variety of videos which cover a pretty wide range of topics (which are categorized). Most videos are 10-15 min. They also have transcripts on the videos. However, it's geared for school kids (but it has filters for school year, which ranges from kindergarten to high school), so it might not be what your looking for.
If you are into books ほんタメ has been constantly playing for me. If you are into games or art なつめさんち is really fun and I like their personalities.
If you are into food or cooking きまぐれクック is really interesting and the structure of his videos lend themselves well to language learning: Finding food / Prep food / Eat food/ Recap.
