With "Faster font loading" experimental feature enabled, it is currently ignoring the font selection:

Possibly relevant: I have multiple fonts selected for use

Chrome Browser on PC, Version 123.0.6312.107

All fonts enabled except: Pixel, Pretty Momo

i.e. Basic, Serif style, Textbook, Kaimin, Hiragino, Yu, Outai, Shino, Echo, Zenmaru, Nachin, Kakushin Gyousho are all enabled

Font that was active: Kakushin Gyousho

I think I turned it on the day I reported it. Not sure if it was working before. I noticed something was amiss when I came across 茎, because it shows the Chinese simplified version, where the 又 is replaced with a ス, which threw me for a loop. That made me check what font it was using.

Today, the Yu font is currently active for me, and it has the same issue i.e. With feature off I get the Yu font, with feature on I get the default font. So, it appears to affect multiple fonts.

I actually made a small change just now that should help.
