As far as I know they both mean renting or borrowing but it's not clear to me how they differ. In which situations should I use them or does it matter?

They are opposites.

借りる  to borrow (receiving an item with the expectaction of giving it back)

貸す to lend (giving away an item with the expectation of getting it back)

To add to that, りる is used the subject/topic is the one receiving it.

す is when the subject/topic is the person lending it out.

So if you think about who is doing the action, it should help clear that up.

りる (kariru) means “to borrow” (you receive something)

す (kasu) means “to lend” (you give something)
