Why isn’t tought in katakana lessons? When do you use it? Which is the difference between ヴ and ブ? Is there a hiragana form for ヴ?

ヴ is usually used for the transcription of foreign words, like in the word グローヴ or even カーブ. So, you'll use the katakana ヴ. If I'm not mistaking, it's closer to the V sound than what ブ would normally do. Notice that you can still use ブ for some of those words; カーブ/カーヴ. The hiragana would be ゔ, but since the Japanese language doesn't really use that sound, it doesn't need it. Since katakana is mainly used to transcribe foreign words, ヴ would be used in order to more accurately represent the sound.

I'd like to point out that even though you CAN freely make the substitution, frequency of usage varies greatly on a word by word basis.

ヴァイオリン (fairly common)

ヴァンパイア (very common)

ヴィタミン (quite uncommon)

ヴァニラ (really uncommon, the model doesn't count)

ヴィーガン (most common version)

Also, Japanese people might just ignore the ヴ and pronounce it the way they’re used to, regardless of how it’s written.
