It would be cool if there was a setting which makes it so vocab quiz questions always use kanji when there is kanji available for a particular term (like the "show unlearned kanji" option, except in the questions, and without furigana).
Are you sure you want this? A lot of the kanji to really simple terms are exceedingly hard, and the dictionary does not always have it marked that 'although this has kanji, it is written in hiragana'. It would not be hard to do as a user setting, but I think it might not be all that great.
More specifically, I'd like to see the JLPT3 kanji that I'm studying while I'm reviewing JLPT4 vocab...I just figured that would be harder to do than just a blanket "always show me the kanji" option.

Honestly, this is something that has been bugging me too.
This is a problem that becomes extremely visible when doing both JLPT and Kanken vocab quizzes as they share some vocabulary. Depending on which quiz I see the term on I may or may not see certain Kanji.
One example:
活字 shows as such on the JLPT2 quiz. On the Kanken quiz however it shows as かつ字.
活字 however is far more useful as that's the more likely way to encounter the word outside of quizzes. Same goes for 北口 vs きた口 and a lot of others.
Another issue is this. Say you have a term on the JLPT4 list that doesn't show the kanji because it's not one of the JLPT4 Kanji but it may be a JLPT3 Kanji. Well, when doing the JLPT3 quizzes you won't get to see it because that word only shows on the JLPT4 quizzes. You may see other words using that Kanji, but you won't see that particular word with it.
I think one good solution to the problem may be to allow a user setting to force all quizzes, regardless of what quiz it is, to a certain Kanji level.
In my case I'm studying JLPT4,3 and 2 vocabulary with some Kanken vocabulary mixed in to learn additional vocabulary that may not be on the JLPT lists. If I could globally set my Kanji level to JLPT2 for any quiz, non-JLPT quizzes included, then that I think would solve the problem. I always thought that is what the "My Kanji study history" thing is supposed to do in the profile setting but I've tried playing with that and it doesn't seem to have any effect.

Right now, there's a list for each user of 'seen kanji'. This is kanji that they've seen in kanji questions before, or kanji that they marked through the 'my kanji study history' section of settings. Currently, it does *not* mark kanji that are seen through vocab questions. I'll consider changing that.
What this list is currently used for is determining what kanji to show in example sentences given on the site. However, I am going to add an option (maybe even put it on by default) where you can say 'use this list in determining what kanji is shown' in vocabulary questions. I think this will answer everyone's problems/complaints, my own included.
I've been working crazy on some new pages for the site, but I'm going to try and add in a few of these requests and do some bug fixing, so hopefully this'll find its way in fairly soon.
