In order to not confuse and , I like to think that younger sisters could sometimes stumble while running around. Hence way their kanji needs 2 sticks to make sure it doesn't fall. Older sisters don't need that though, so those sticks are transferred up and become arms.

With 高い, the adjective carries multiple senses (high / tall / expensive), and context disambiguates.
With 高さ, that ambiguity is gone: the noun just means "degree / level / height", and the semantic load shifts to the noun it attaches to.
To express "expensiveness", you therefore need something like 値段の高さ (値段 = "price").

For example, このシャツの高さ refers to the shirt's physical measurements, not its price.

1日 (ついたち) come from the word 朔日(ついたち) which itself come from the word.... 月立ち (つきたち) which is just (moon and... month?) + 立ち (more or less rising here). It's related to the ancient lunar calendar based on the cycle of the moon where the first day of the month was the moment where the moon rise... again. The first kanji of 朔日 is also composed of the part (go against, reverse) and (moon/month). So... you could say that ついたち is also the "Day of the reversal of the moon (month)" *dramatic noise in the background*. Aka... when the moon "reverse" to it initial state, the "new moon". Or the first day of the month.

Anyway, now you know why 1日 is different and even why mean both moon and... month =p

人間 feels more impersonal and evaluative, as if you're judging someone's nature rather than just referring to them. Because of that, it often comes across as negative when talking about someone directly.
