万葉仮名 — an early Japanese phonetic writing system that used Chinese characters to represent Japanese sounds. A single sound could be written using multiple different kanji.

平仮名 (ひらがな) — a cursive, simplified development of 万葉仮名, derived from handwritten styles of Chinese characters. Essentially 平 ("plain / smooth / common") + 仮名 ("kana").

PS: 片仮名 (カタカナ) were created by extracting parts of 万葉仮名 characters, hence the 片 (fragment) kanji.

From 酸し (sushi, “sour”), the archaic し (shi) terminal-form conjugation of modern 酸い (sui, “sour”). Originally, sushi was a form of salted and fermented fish packed with vinegared rice to speed fermentation.

The kanji are ateji (当て字), chosen for their positive associations. 寿, longevity, hints at the preservative properties of vinegar. , office, indicates the elite clientele of the sushiya. A folk etymology attributes them to the phrase 寿を司る.
