Imagine a kangaroo chef (か = "ka") in the kitchen, cooking up a genie (げん = "gen") in a pot!

This kangaroo is a master at adjusting the heat, adding just the right amount of spices to make the perfect dish. But the genie in the pot is super picky—too much salt, and it’ll explode in a puff of smoke; too little, and it’ll turn into a giant broccoli!

So the kangaroo is constantly moderating the cooking, adding a pinch of this, a dash of that, and adjusting the heat to get it just right, so the genie doesn’t go wild!

Whenever you think of 加減 (かげん), picture that kangaroo chef carefully adjusting the pot, making sure the genie doesn’t blow up the kitchen!

They mean the same thing but 夫妻【fusai】is more polite.

You can use 夫婦【fuufu】to refer to yourselves (私たち夫婦), for others and use it formally (ご夫婦).
But you can't use 夫妻【fusai】to refer to yourselves.

Also when speaking formally, ご夫妻 is better than ご夫婦.
