I was told by a Japanese teacher that using がたい indicates that something is logically impossible. がたい is not used with all verbs. When it is added to a verb stem the result is an adjective. For example:
得がたい (difficult to obtain, rare)
動かしがたい (immovable)
許しがたい (unforgivable)
耐え難い (unbearable)
止みがたい (irresistible)
忘れがたい (unforgettable)
