I don’t quite understanding where the “な” comes in - Genki doesn’t mention it at all and the TokiNi Andy video I watched along side it doesn’t quite explain either?

I cannot speak as to those two resources, but the の here is the nominalizing の that changes something else into a noun. As an external reference (for another point of trust, so it's not "just renshuu"), you can check out [my.wasabi-jpn.com]to see that when nominalizing na-adjectives, you need the な between the adjective and the の

The example sentences are not using a verb but instead are using な-adj.
