Other than いい・よい, you can also use まし for stronger expression.

降伏するより死んだほうがましだ。
I would rather die than surrender.

「A より、B のほうは ...」　means B is more ... than A. It is currently the other way around in the description.

What would be the difference between this form and the other より　form? 春は冬よりあたたかいです。 高いよりやすい方がいいです。 Is it that perhaps the second usage refers to general comparison, while the first is more specific?

exactly like you said: the latter is more specific. Also, the former is much more commonly used than the latter, at least in my area ;)

I've seen some examples where the format is like this ほうが~より. 

車で行くほうがバスで行くより安い・安いです。
Going by car is cheaper than going by bus.

According to A dictionary of basic Japanese grammar, the C component doesn't have to be just an adjective, it can be any predicate. As in,

私のほうが上田さんよりよく食べる。
I eat more than Ms. Ueda does.
